Broccoli Cheddar Soup

Ingredients

  • 3 Tbsp butter
  • 1 small yellow onion, diced
  • 3 Tbsp all-purpose flour
  • 4 cups vegetable broth
  • 3 cups fresh broccoli florets, chopped
  • 1 cup milk
  • 1 1/2 cups Maytag 1-Year Aged Cheddar, freshly grated
  • Salt and black pepper, to taste

 

Directions

  1. Melt butter in a large pot over medium heat. 
  2. Add onion and cook until softened. Stir in flour and cook for 1 minute, stirring constantly. 
  3. Slowly add broth, mixing until smooth, and bring to a gentle simmer.
  4. Add chopped broccoli and cook until tender, about 8-10 minutes.
  5. For a creamier base, use an immersion blender and blend partially until you reach the desired texture. 
  6. Reduce heat to low and stir in milk and shredded Maytag 1-Year Aged Cheddar until smooth and melted. 
  7. Season with salt and black pepper to taste. 
  8. Top with fresh herbs and additional shredded cheddar and serve warm.
