Blue Cheese Cowboy Caviar

Our Blue Cheese Cowboy Caviar recipe puts a tangy twist on a classic Southern side! This healthy, colorful salad is packed with nutrient-dense vegetables and flavorful Maytag Blue, then finished with a light vinaigrette.

 

 

Cowboy Caviar Ingredients

  • 1 can sweet corn, drained
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, quartered
  • 1/2 medium red onion, diced
  • 1 jalapeño, finely chopped
  • 1/4 cup cilantro
  • 3/4 cup Maytag Blue Cheese Crumbles
  • Parsley, chopped

 

Vinaigrette Ingredients

  • 1/4 cup olive oil
  • 3 Tbsp fresh lime juice
  • 2 Tbsp Maytag Honey
  • 1 garlic clove, minced
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste

 

Directions

  1. Add corn, black beans, bell pepper, tomatoes, red onion, jalapeño, and cilantro to a large bowl. Mix until combined.
  2. In a separate bowl, whisk together olive oil, lime juice, Maytag Honey, garlic, ground cumin, and salt and pepper.
  3. Pour the vinaigrette over the vegetable salad and combine until evenly coated. Gently fold in the Maytag Blue Cheese Crumbles.
  4. Refrigerate for at least 30 minutes, then top with parsley and additional blue cheese when ready to serve.
