Our Blue Cheese Cowboy Caviar recipe puts a tangy twist on a classic Southern side! This healthy, colorful salad is packed with nutrient-dense vegetables and flavorful Maytag Blue, then finished with a light vinaigrette.

Cowboy Caviar Ingredients
- 1 can sweet corn, drained
- 1 can black beans, rinsed and drained
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, quartered
- 1/2 medium red onion, diced
- 1 jalapeño, finely chopped
- 1/4 cup cilantro
- 3/4 cup Maytag Blue Cheese Crumbles
- Parsley, chopped
Vinaigrette Ingredients
- 1/4 cup olive oil
- 3 Tbsp fresh lime juice
- 2 Tbsp Maytag Honey
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- Salt and black pepper, to taste
Directions
- Add corn, black beans, bell pepper, tomatoes, red onion, jalapeño, and cilantro to a large bowl. Mix until combined.
- In a separate bowl, whisk together olive oil, lime juice, Maytag Honey, garlic, ground cumin, and salt and pepper.
- Pour the vinaigrette over the vegetable salad and combine until evenly coated. Gently fold in the Maytag Blue Cheese Crumbles.
- Refrigerate for at least 30 minutes, then top with parsley and additional blue cheese when ready to serve.
