White Cheddar & Spinach Quiche

White Cheddar & Spinach Quiche

  • Pie Crust of your choice
  • 1 10-oz. box of frozen spinach
  • 1 tablespoon butter
  • ½ small onion, chopped
  • 1 ¼ cups shredded Maytag White Cheddar Cheese
  • 5 eggs
  • 1 2/3 cup light cream
  • 1 1/2 tsp kosher salt
  • 1 tsp ground mustard
  • Pinch of cayenne pepper & nutmeg (or more to taste)

Directions

  1. Completely thaw the spinach and squeeze to remove all liquid possible.
  2. Preheat the oven 425 degrees.
  3. Heat a sauté pan on the stove top and melt butter. Sautee onions until soft and slightly translucent 5-7 minutes.  Set aside and cool.
  4. Sprinkle the spinach and onions evenly into the bottom of the prepared pie crust.
  5. Layer the shredded Maytag Cheddar Cheese on top of the spinach and onions.
  6. In a mixing bowl, beat the eggs thoroughly. Add the cream, salt, mustard, cayenne and nutmeg.
  7. Pour egg mixture gently over the spinach, onion, and cheese.
  8. Place in preheated oven and bake for 15 minutes. Lower the oven to 350 degrees and bake for an additional 20 minutes or until quiche is firm.
  9. Let cool until the quiche is set, approximately 30 minutes. Cut into wedges and serve.
