- Pie Crust of your choice
- 1 10-oz. box of frozen spinach
- 1 tablespoon butter
- ½ small onion, chopped
- 1 ¼ cups shredded Maytag White Cheddar Cheese
- 5 eggs
- 1 2/3 cup light cream
- 1 1/2 tsp kosher salt
- 1 tsp ground mustard
- Pinch of cayenne pepper & nutmeg (or more to taste)
Directions
- Completely thaw the spinach and squeeze to remove all liquid possible.
- Preheat the oven 425 degrees.
- Heat a sauté pan on the stove top and melt butter. Sautee onions until soft and slightly translucent 5-7 minutes. Set aside and cool.
- Sprinkle the spinach and onions evenly into the bottom of the prepared pie crust.
- Layer the shredded Maytag Cheddar Cheese on top of the spinach and onions.
- In a mixing bowl, beat the eggs thoroughly. Add the cream, salt, mustard, cayenne and nutmeg.
- Pour egg mixture gently over the spinach, onion, and cheese.
- Place in preheated oven and bake for 15 minutes. Lower the oven to 350 degrees and bake for an additional 20 minutes or until quiche is firm.
- Let cool until the quiche is set, approximately 30 minutes. Cut into wedges and serve.
