Guacamole is always a fan-favorite and Chef Alex Strauss of Hy-Vee has revamped guacamole to encompass all things Iowa!
Ingredients
- 4 avocados, peeled, pitted, and coarsely smashed
- 1 lime, juiced
- 1/2 jalapeno, finely diced
- 2 cloves garlic, minced
- 1 ear of corn, grilled and cut off the cob
- 3 slices of thick cut bacon, cooked, and roughly chopped
- 2 oz. pulled pork, finely copped
- 1 oz. Maytag Blue Cheese, finely crumbled
- Lola's hot sauce to taste
Directions
Begin by cooking 2 oz. pulled pork and grilling an ear of corn. Once it is grilled, cut the corn off the cob. Set aside. Next, grill 3 slices of thick cut bacon. Once cooked, roughly chop the bacon. Set aside.
Peel, pit, and coarsely mash the avocados in a mixing bowl. Dice the jalapeno and mince the garlic. Add the corn, bacon, jalapeno, and garlic to the smashed avocados.
Fold in Maytag Blue Cheese crumbles and pulled pork.
Juice the lime and add in Lola's hot sauce to taste.
Mix together. Serve with tortilla chips.
