Irish Nachos

Crispy potatoes topped with Maytag Cheese and your favorite toppings create these irresistible Irish Nachos, perfect for St. Patrick's Day.

 

Ingredients

  • 3-4 large Russet potatoes
  • 3 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 2 cups Maytag Yellow Cheddar, shredded
  • 1 cup Maytag Aged Gouda, shredded
  • 6 slices thick-cut bacon, crumbled
  • 1/2 cup diced red onion
  • 1/4 cup green onions, chopped
  • 1/2 cup jalapeños, sliced
  • 1/2 cup tomatoes, diced
  • Sour cream

 

Directions

  1. Preheat the oven to 400° F. Slice potatoes into 1/8-inch rounds. In a large bowl, toss potatoes with olive oil, garlic powder, smoked paprika, and salt & pepper.
  2. Arrange seasoned potatoes in a single layer on a parchment-lined baking sheet.
  3. Bake for 20-25 minutes, flipping potatoes halfway. Remove from oven once golden and crispy on the edges. 
  4. Transfer to a cast iron skillet or oven-safe platter, then top with Maytag Yellow Cheddar and Aged Gouda. Bake for 5-7 minutes, until the cheese is melted and bubbly. 
  5. Remove and garnish with chopped bacon, onions, jalapeños, tomatoes, and sour cream. Serve immediately.
