Crispy potatoes topped with Maytag Cheese and your favorite toppings create these irresistible Irish Nachos, perfect for St. Patrick's Day.
Ingredients
- 3-4 large Russet potatoes
- 3 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & black pepper, to taste
- 2 cups Maytag Yellow Cheddar, shredded
- 1 cup Maytag Aged Gouda, shredded
- 6 slices thick-cut bacon, crumbled
- 1/2 cup diced red onion
- 1/4 cup green onions, chopped
- 1/2 cup jalapeños, sliced
- 1/2 cup tomatoes, diced
- Sour cream
Directions
- Preheat the oven to 400° F. Slice potatoes into 1/8-inch rounds. In a large bowl, toss potatoes with olive oil, garlic powder, smoked paprika, and salt & pepper.
- Arrange seasoned potatoes in a single layer on a parchment-lined baking sheet.
- Bake for 20-25 minutes, flipping potatoes halfway. Remove from oven once golden and crispy on the edges.
- Transfer to a cast iron skillet or oven-safe platter, then top with Maytag Yellow Cheddar and Aged Gouda. Bake for 5-7 minutes, until the cheese is melted and bubbly.
- Remove and garnish with chopped bacon, onions, jalapeños, tomatoes, and sour cream. Serve immediately.
