Ingredients
- 1 Tbsp butter or olive oil
- 2 large eggs
- 1 cup fresh spinach
- 1/4 cup Maytag 1-Year Aged Cheddar
- 1/4 cup Maytag Blue Cheese Crumbles
- Salt & pepper to taste
Directions
Add butter or olive oil to a nonstick skillet and melt on medium heat.
In a small bowl, whisk eggs and salt & pepper until well combined. Pour the egg mixture into the pan, allowing to cook until slightly set. Use a spatula to gently push the edges to the center, tilting the pan so the uncooked egg flows to the edge of the skillet.
When the omelet is almost set but still soft on top, add spinach to one half. When the spinach begins to wilt, add Maytag 1-Year Aged Cheddar on top, then finish with Maytag Blue Cheese Crumbles. Let the cheese partially melt then fold the omelet in half.
Plate the omelet, top with additional Maytag Blue Cheese Crumbles, and serve immediately.
